What should I do with this sicko looking black banana? Thank you, google. Banana muffins!

1 overly ripe, gross-looking banana, mashed with fork
1 stick of butter, softened
1 egg
milk (I’ll explain in a minute)
1 1/2 tsp. vanilla
1 1/2 c. flour
1 c. sugar
1 tsp. baking soda
1/2 c. blueberries

Preheat the oven to 350.

Crack your egg into  a liquid measure measuring cup. Give it a good stir with your fork, and then fill the cup with milk up to 1 c. This way you’ll have a total of 1 c. of liquid. Make sure your butter is totally softened. This is IMPORTANT. (Read: I have made the mistake of using cold-ish butter before, and it was gross.)

In a large bowl, dump the butter and milk mixture. Give it a blend with your hand mixer. Then, add the banana, vanilla, flour, sugar and baking soda. Mix with a spoon so you don’t get the powder explosion when you start mixing with your hand blender. Okay, all the flour & sugar are at least partially mixed with the wet ingredients, right? Now use the hand blender and mix thoroughly. Then add in the blueberries and gently fold in with a spoon.

Spray a mini muffin pan with PAM. Use about 1 tbsp. of the batter to fill each cup 2/3 full, and bake for about 15 minutes. Move them to a wire rack to cool, and start over again!
